My kids love anything with coconut and so these waffles go down a treat. Try these as a comforting dessert served with vanilla ice cream or whipped cream and a little toasted desiccated coconut sprinkled over the top.

100g softened butter
1 teaspoon vanilla extract
1 teaspoon lemon juice
100g desiccated coconut
250g plain flour
5 teaspoons baking powder
1 pinch of salt

Separate the eggs and then beat the egg yolks with the butter and honey until fluffy, add the vanilla and lemon juice.
Mix the flour and baking powder and stir into the butter. Beat the egg whites with salt until stiff and mix this mixture with the milk and the coconut into the egg yolks added and form a smooth dough.
Heat the waffle iron and cook the waffles for 2-3 minutes.
