About this recipe:I often take this salad to the office for a packed lunch. You can of course vary with the ingredients and if you're a vegetarian, you can leave out the sausage. It makes a lovely lunch - tasty and filling.
1 red pepper, seeds removed and diced
1 green peppers, seeds removed and diced
2 tins of sweetcorn
2 tomatoes, diced
225g salami or smoked sausage, diced
1 tablespoon finely chopped onion
salt and freshly ground pepper to taste
