Diet Pancakes

If you bake pancakes in the oven, you'll save yourself the butter which you would normally use to grease the pan. These pancakes consist mainly of low-fat quark, and so are low in calories. You can fill them with a whole manner of fillings, such as a fruit compote.

    Serves: 1

    • 40g quark
    • 6 tablespoons sparkling water
    • 1 pinch salt
    • 1 egg
    • 20g plain flour

    1. Mix the quark, water, salt and egg with a whisk. Then stir in the flour and let the batter stand for 10 minutes.
    2. Preheat oven to 200 C / Gas 6 and line a baking tray with baking parchment.
    3. Stir once and pour batter into the centre of the baking tray.
    4. Shape the batter into a rectangle (not too thin!). Bake in preheated oven for about 10-12 minutes.
