About this recipe:This pancake is super easy to bake and tastes wonderful. You can flavour the batter with cinnamon or vanilla. The best way to bake the pancakes is in a deep cast-iron pan. Classically served with icing sugar, but I often serve it with nuts or butter on top and drizzled with lemon juice.
125g plain flour
4 large eggs

Preheat oven to 220 C / Gas 7 and heat a deep, cast-iron pan in the oven.
Lightly whisk the eggs until foamy, then stir in the milk. Slowly stir the flour into the batter.
Remove the pan from the oven, and melt butter in it completely on the hob, until the entire bottom of the pan is covered with butter.
Pour batter into the pan and place the pan into the preheated oven. Bake for 12-15 minutes, until the pancake has risen, lightly browned and arches over the edge of the pan.
Cut into pieces, sprinkle with icing sugar or nuts and serve immediately.
