This pancake is super easy to bake and tastes wonderful. You can flavour the batter with cinnamon or vanilla. The best way to bake the pancakes is in a deep cast-iron pan. Classically served with icing sugar, but I often serve it with nuts or butter on top and drizzled with lemon juice.

- 60g butter
- 250ml milk
- 125g plain flour
- 4 large eggs
- To serve
- Icing sugar (optional)
- Chopped walnuts (optional)
- Lemon juice (optional)

- Preheat oven to 220 C / Gas 7 and heat a deep, cast-iron pan in the oven.
- Lightly whisk the eggs until foamy, then stir in the milk. Slowly stir the flour into the batter.
- Remove the pan from the oven, and melt butter in it completely on the hob, until the entire bottom of the pan is covered with butter.
- Pour batter into the pan and place the pan into the preheated oven. Bake for 12-15 minutes, until the pancake has risen, lightly browned and arches over the edge of the pan.
- Cut into pieces, sprinkle with icing sugar or nuts and serve immediately.
