5 egg whites
1 teaspoon flour
1 teaspoon cornflour

Preheat oven to 200 C / Gas 6.
Beat the egg yolks with sugar until fluffy. Stir in flour and cornflour. Beat the egg whites until stiff and fold into the mixture.
In a heavy cast iron pan, heat plenty of butter. Pour the omelette mix over it and put the lid on the pan. Now place it into the hot oven. Reduce the temperature to 190 C / Gas 5 and bake until golden-yellow.
Remove from the oven and slide onto a heated plate. Now fill with fruit compote or jam and fold.
