About this recipe: This easy cake can be prepared in no time. I think it's the bubbles in the Fanta® that make the cake so fluffy. It's especially good for children's birthdays as the cake doesn't rise so high and so is easy for smaller kids to eat.


Serves: 1 

  • 4 eggs
  • 400g caster sugar
  • 1 teaspoon vanilla extract
  • 200ml sunflower oil
  • 200ml orange Fanta®
  • 400g plain flour
  • 5 teaspoons baking powder
  • 1 pinch salt
  • For the filling
  • 1 tub chocolate icing

Prep:20min  ›  Cook:40min  ›  Ready in:1hr 

  1. Preheat oven to 180 C / Gas 4 and line a deep 20x30cm baking tin with baking parchment.
  2. Beat the eggs, sugar and vanilla until fluffy. Then stir in the sunflower oil and gradually stir in the Fanta®. It will fizz quite a bit.
  3. Mix the flour, baking powder and salt and stir the mixture into the Fanta® gradually. Spread the mixture over the bottom of the prepared baking tin.
  4. Bake in the preheated oven at 180 C / Gas 4 for 20 minutes, reduce to 160 C / Gas 2 and bake for another 20 minutes.
  5. When cool, spread with chocolate icing (shop bought, or make your own). Cut into small squares.
