Pan-fried Potatoes with Bacon

    A very simple recipe for fried potatoes that I often make for breakfast. The bacon lends a great flavour to the potatoes without being overpowering. Serve with a fried egg or scrambled eggs for a wonderfully tasty alternative to a fry up.

    Serves: 2 

    • 500g waxy potatoes
    • salt
    • 50g bacon, finely diced
    • 20g butter
    • 2 onions, finely diced

    1. Put potatoes into a saucepan with a lid, season with salt and cover with cold water. Over a high heat and with a closed lid, bring the water to the boil, reduce heat and simmer for 20-25 minutes. Drain off the water, leave the potatoes to cool briefly, peel and cut into slices.
    2. Fry the bacon in a large pan in the butter over low heat until crispy and set aside. Add the potato slices to the same pan and fry over a medium heat until the underside is lightly browned. Turn, add the onions and fry on the other side until also brown. Finally, add the bacon and fry it all over again.
