Frog prince cupcakes

    These cupcakes are always a hit at kids' birthdays - the kids go crazy for them. The lime jelly combines with cream to make a heavenly filling. You can then get creative making the frogs' faces. Some great tools to use are white marshmallows and black decorating icing for the eyes.

    • Sponge
    • 3 eggs
    • 2 tablespoons water
    • 150g caster sugar
    • 1 pinch salt
    • 150g flour
    • 50g cornflour
    • 3 teaspoons baking powder
    • Filling
    • 1 sachet lime jelly mix
    • 100g caster sugar
    • 250ml boiling water
    • 125ml cream
    • 150g icing sugar
    • green food colouring
    • 2 tablespoons water
    • 25g melted butter
    • Decoration
    • green decorating sugar
    • marshmallows
    • black decorating icing

    1. Preheat the oven to 190 C / Gas 5. Butter a muffin tin or line with paper cases.
    2. For the sponge: Separate the eggs. Beat the egg yolks with 2 tablespoons water and sugar until foamy. Mix flour with cornflour and baking powder and mix into the egg yolk mixture. Beat the egg whites until stiff and fold them in too.
    3. Pour the batter evenly into a muffin tin and smooth out. Bake for 15-20 minutes in the preheated oven. Leave to cool and then cut a lid out of the domed tops.
    4. For the filling: Mix the lime jelly mix with 100g sugar and 250ml boiling water. Leave in the fridge until half-set. Beat the cream and fold it in to the jelly. Leave to set a little bit longer, then pour into a piping bag. Squirt the mixture onto the bottom half of the muffins.
    5. Make a glaze out of the icing sugar, green food colouring, water and melted butter, and cover the tops of the cooled muffins with it. Place tops askew on top of the lime jelly cream and place marshmallows as eyes into the still wet glaze. You can get creative with the green decorating sugar and black icing to make the pupils, irises and smiling mouths.
