Next time I would add the following steps to make the cake a bit more juicy: After baking take the cake out of the baking tin and stick a knitting needle about 3/4 through the cake all over the surface (be careful not to stick them all the way through to the bottom). Then pour a sirup of 100 g icing sugar and 100 ml freshly squeezed lemon juice on the cake. Put a baking sheet below as some of the sirup might go all the way through the cake.
