Lemon Cake for a Crowd

    I love any kind of lemon cake. This is a great cake if you have lots of people to feed. It is also fantastic for a leaving do or school fete. It is a simple lemon cake with a delicious lemon drizzle.

    Makes: 1 cake

    • 350g softened butter
    • 350g caster sugar
    • 1 teaspoon vanilla extract
    • 6 eggs
    • 350g plain flour
    • 3 teaspoons baking powder
    • grated zest of 2 lemons
    • Lemon drizzle
    • 200g icing sugar
    • 4 tablespoons lemon juice

    1. Preheat oven to 200 C / Gas 6.
    2. Beat butter, sugar and vanilla until fluffy. Add eggs. Add flour and baking powder and mix well. At the end stir in lemon zest.
    3. Spread on a buttered baking tray in and bake for 20 minutes in the preheated oven. Let it cool.
    4. Stir together the icing sugar and lemon juice and drizzle over the cooled cake. Allow to set.

    This cake was a disappointment. I followed the directions exactly but it turned out very dry. The glaze is nice but considering the cake took six eggs as well as a fresh lemon and still was dry I will not be making it again.  -  11 May 2018  (Review from Allrecipes US | Canada)


    really quick and easy to make and whole family loved it. I make my own vanilla sugar by sticking used vanilla beans into a jar of sugar and after a couple of weeks the sugar has a great vanilla taste. you can leave the beans in for a long time, even scraped out beans still have a lot of flavor  -  17 Oct 2017  (Review from Allrecipes US | Canada)


    . Very yummy! Next time I would add the following steps to make the cake a bit more juicy: After baking take the cake out of the baking tin and stick a knitting needle about 3/4 through the cake all over the surface (be careful not to stick them all the way through to the bottom). Then pour a sirup of 100 g icing sugar and 100 ml freshly squeezed lemon juice on the cake. Put a baking sheet below as some of the sirup might go all the way through the cake. Use up 2/3 of the sirup. Then add another 100 g of icing sugar and use this as the lemon icing for the cake. Put in the fridge to cool. Enjoy!  -  26 Jun 2012  (Review from Allrecipes AU | NZ)
