About this recipe:I love any kind of lemon cake. This is a great cake if you have lots of people to feed. It is also fantastic for a leaving do or school fete. It is a simple lemon cake with a delicious lemon drizzle.

350g softened butter
350g caster sugar
1 teaspoon vanilla extract
350g plain flour
3 teaspoons baking powder
grated zest of 2 lemons
200g icing sugar
4 tablespoons lemon juice

Preheat oven to 200 C / Gas 6.
Beat butter, sugar and vanilla until fluffy. Add eggs. Add flour and baking powder and mix well. At the end stir in lemon zest.
Spread on a large buttered baking tin and bake for 20 minutes in the preheated oven. Let it cool.
Stir together the icing sugar and lemon juice and drizzle over the cooled cake. Allow to set.
