250g caster sugar
1 teaspoon vanilla extract
375g plain flour
4 teaspoons baking powder
4 tablespoons rum
3 tablespoons milk

Preheat the oven to 180 C / Gas 4.
Stir together all ingredients in the order listed till smooth. Place in a large loaf tin.
Bake for 15 minutes at 180 C / Gas 4 and then for a further 30 minutes at 200 C / Gas 6, until a skewer inserted in the centre comes out clean.
