About this recipe: A really easy and classic cake that's always well received. This will become your staple Madeira cake recipe, guaranteed! Use your favourite rum for the recipe. You can also use brandy if you feel like something different.


Makes: 1 Madeira cake

  • 250g softened butter
  • 250g caster sugar
  • 1 teaspoon vanilla extract
  • 5 eggs
  • 375g plain flour
  • 125g cornflour
  • 4 teaspoons baking powder
  • 4 tablespoons rum
  • 3 tablespoons milk
  • grated lemon zest

Prep:10min  ›  Cook:45min  ›  Ready in:55min 

  1. Preheat the oven to 180 C / Gas 4.
  2. Stir together all ingredients in the order listed till smooth. Place in a large loaf tin.
  3. Bake for 15 minutes at 180 C / Gas 4 and then for a further 30 minutes at 200 C / Gas 6, until a skewer inserted in the centre comes out clean.
