Mexican Style BBQ Spring Onions (Cebollitas)
- 1 bunch spring onions
- 3 tablespoons olive oil
- salt and pepper to taste
- Juice of 1-2 lemons

- Wash and cut off the upper third of the green part of the spring onions. Place in a bowl, drizzle with olive oil and season with salt and pepper. Marinate for at least half an hour.
- Place the marinated spring onions on a preheated BBQ and barbecue until the onions start to go soft and the ends start turning black, all the time turning and drizzling with lemon juice.
- If you like it really lemony, you can drizzle the cebollitas with lemon juice again at the end.
