About this recipe:When I was in Mexico last year, I ate cebollitas for the first time. They often serve them there as an accompaniment to meat dishes or just as a snack. Spring onions should be marinated for a while (at least 30 minutes) in olive oil.
1 bunch spring onions
3 tablespoons olive oil
salt and pepper to taste
Juice of 1-2 lemons

Wash and cut off the upper third of the green part of the spring onions. Place in a bowl, drizzle with olive oil and season with salt and pepper. Marinate for at least half an hour.
Place the marinated spring onions on a preheated BBQ and barbecue until the onions start to go soft and the ends start turning black, all the time turning and drizzling with lemon juice.
If you like it really lemony, you can drizzle the cebollitas with lemon juice again at the end.
