I make this cake for every birthday party. Because no flour is used, it can also be eaten by children with a gluten allergy. You can buy chocolate covered cherries from the supermarket instead of making your own.

75g softened butter
100g caster sugar
1 bar plain chocolate
125g ground almonds
6 eggs, separated
1 bar plain chocolate, melted
1 jar glace cherries
2 200ml whipping cream

Preheat oven to 180 C / Gas 4.
Beat butter and sugar until fluffy.
Melt chocolate in a double boiler (or in short bursts in the microwave) and mix with the almonds into the butter mixture.
Separate the eggs and mix the egg yolks to the mixture.
Beat egg whites until stiff and fold into the mixture. Pour into a greased round cake tin and bake in the preheated oven for 30 minutes. Allow to cool.
Cover the cherries with the melted chocolate and leave to harden. Whip the cream.
Make a hollow in the middle of the cake and fill with cherries and cream. Sprinkle the crumbs from hollow over the cream again.
