About this recipe:
Everyone loves Boursin cheese, and this is a fantastic way to make use of it. These savoury muffins are great for brunch. The muffins freeze well and can also be easily reheated.
200g plain flour
50g oat bran
1 level tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 large egg
150g Boursin cheese at room temperature, stirred until creamy
2 teaspoons chopped chives

Preheat the oven to 180 C / Gas 4. Line a muffin tray with paper cases.
Mix the flour, oat bran, baking powder, salt and pepper.
Mix the egg with the milk and Boursin and mix well (it should not form lumps, if it does, the Boursin is too cold). Fold into the flour mixture to create a uniformly moist mixture.
Spoon the mixture into the paper muffin cases and bake for 30 minutes in the preheated oven, until a skewer comes out clean. Allow to cool on wire cake rack.
Just like muffins should be! Easy and scrumptious.
Can't wait to have these for lunch tomorrow at work, with a cucumber salad!
However, I realize now that there's no mention of the chives in the preparation method... I didn't have any anyway but I guess next time I would add it to the mixture just after the eggs-boursin-milk mix.

Quick and easy to make, absolutely delicious hot or cold.

Altered ingredient amounts.
I used cream cheese with herbs instead of boursin. Nice, creamy, savoury muffin, perfect for brunch.
