Forest Fruits Cheesecake Brownies

    This is an extraordinary brownie recipe. The brownie layer is topped with a gorgeous layer of cream cheese and then your favourite berries. Fresh or frozen berries are equally delicious. If you don't like macadamia nuts, walnuts are a nice substitution.

    • 200g caster sugar, divided
    • 60g soft butter
    • 1 pinch salt
    • 3 eggs (room temperature)
    • 6 tablespoons cocoa
    • 40g plain flour
    • 50g coarsely chopped macadamia nuts
    • 250g light cream cheese
    • 1 teaspoon cornflour
    • 200g fresh or frozen berries (blackberries, raspberries, blueberries, etc.)

    1. Beat 100g sugar with the butter and 1 pinch of salt for 5 minutes until light and creamy. Gradually beat in 2 of the eggs.
    2. Sieve the cocoa and flour into a bowl and fold into the butter mixture. Set aside 3 tablespoons of the butter mixture. Add the coarsely chopped macadamia nuts to the bowl.
    3. In another bowl, beat the cream cheese with 1 egg and cornflour until fluffy. Fold the berries in gently.
    4. Pour the nut mixture into a buttered or parchment-lined springform tin. Smooth the mixture out. Spread the cream cheese mixture on top.
    5. Drop the the 3 tablespoons of butter mixture that you set aside in small knobs on top and marble it ito the cream cheese with a fork.
    6. Bake in the preheated oven at 180 C / Gas 4 for 35-40 minutes.
    7. For the best flavour, allow the brownies to cool and then place in the fridge for an hour before serving.

    Best brownies recipe I've used though I think you forgot to add the other half of the sugar to the soft cheese mix in the recipe. I also had too much of the mix even when I used 200g of cheese rather than 250g.  -  17 May 2012
