Black olive vinaigrette


    I recently made this vinaigrette for a party and it was a hit! It is fantastic on a plain green salad, or on a Greek-inspired salad with feta, cos lettuce and tomatoes. It also tastes great on fresh bread.

    Serves: 10 

    • 5 tablespoons olive oil
    • 1 tablespoon white wine vinegar
    • 3-4 tablespoons water
    • 1 clove garlic, pressed through the garlic press
    • 4 sprigs parsley, finely chopped
    • 25g capers, drained and chopped
    • 25g black olives, pitted and chopped
    • salt and freshly ground black pepper to taste

    1. Stir the olive oil, vinegar and water, and season with salt and pepper. Add the garlic, parsley, capers and olives and mix well.
