About this recipe: A quick pancake recipe that even fussy eaters love. You can use other fruits instead of the apples. Pears are particularly delicious! Serve with a dusting of icing sugar for a divine treat.


Serves: 4 

  • 400g light wholemeal flour (or plain flour)
  • 4 eggs
  • 750ml milk
  • 1 pinch salt
  • 80g sugar
  • 2 to 3 apples - cored, peeled and chopped
  • butter for frying
  • icing sugar for dusting (optional)

  1. Stir the flour, eggs, milk, salt and sugar to a smooth batter. Lastly add the apple pieces.
  2. Heat some butter in a medium-sized pan over medium-high heat and pour in about 4 tablespoons of the pancake batter. Swirl the pan to distribute the batter evenly. Fry over a medium to high heat until the edges begin to darken and dry out a bit. Flip the pancake with the help of the pan lid or a spatula and fry the other side till golden.
  3. Keep warm. Repeat with the rest of the pancake batter. Dust with icing sugar before serving.
