400g light wholemeal flour (or plain flour)
1 pinch salt
2 to 3 apples - cored, peeled and chopped
butter for frying
icing sugar for dusting (optional)

Stir the flour, eggs, milk, salt and sugar to a smooth batter. Lastly add the apple pieces.
Heat some butter in a medium-sized pan over medium-high heat and pour in about 4 tablespoons of the pancake batter. Swirl the pan to distribute the batter evenly. Fry over a medium to high heat until the edges begin to darken and dry out a bit. Flip the pancake with the help of the pan lid or a spatula and fry the other side till golden.
Keep warm. Repeat with the rest of the pancake batter. Dust with icing sugar before serving.
