About this recipe: These pears are delicious with vanilla ice cream, custard or chocolate sauce. They also work well as a compote to serve with pancakes. Perfect for when local pears are abundant and in season.


Serves: 6 

  • 2.5L water
  • 300g sugar
  • walnut-sized piece of fresh root ginger, peeled
  • 2 cinnamon sticks
  • 6-8 firm pears
  • juice of 2 lemons

  1. Bring water and sugar to the boil in a large pan. Cut the ginger into 8 thin strips. Add the cinnamon stick and the ginger and cook uncovered for 30 minutes over a low heat.
  2. Peel the pears and rub in some lemon juice immediately so that they don't go brown. Cut in half and remove the core.
  3. Add the pears and the remaining lemon juice to the syrup and simmer for 25-30 minutes until the pears can be stabbed easily with a knife.
  4. Gently remove the pears from the syrup and set aside.
  5. Pour syrup through a sieve and return to the pan. Bring to the boil and cook until thick and syrupy.
  6. Pour syrup on the pears and store in an air-tight glass container in a cool place until serving.
