Baking tray pizza

    This is a fantastically easy pizza recipe. The pizza base is different from the norm, but is quick to make and tastes delicious. You can top the pizza however you like - I usually just use whatever I have in the fridge.

    Serves: 4 

    • For the base
    • 250g quark or creme fraiche
    • 6 tablespoons low-fat milk
    • 6 tablespoons olive oil
    • 1/2 tsp baking powder
    • 350g plain flour
    • For the filling
    • 200g tomato puree
    • 4 tomatoes, sliced
    • a few slices of ham, diced
    • 5 mild chillies, cut small
    • 15 mushrooms, sliced
    • dried oregano (optional)
    • garlic salt (optional)
    • 400g grated cheese

    1. Mix all the ingredients for the base well. Line a baking tray with baking parchment and roll dough out on it. Prick several times with a fork.
    2. Preheat oven to 190 C / Gas 5.
    3. Spread the tomato puree on the base and distribute the remaining ingredients evenly on top. Season to taste with oregano, garlic and salt and finally sprinkle with the grated cheese.
    4. Bake the pizza in the preheated oven for about 22 minutes.

    Flavour was great but was a bit doughy in the middle, cooked it slightly longer as well but either my baking powder wasnt working (and its new) or it needed to be rolled thinner to make it crisper. used the largest size tray I had so next time will prob divide into two and make it thin or increase the baking powder to give it more 'air'. All that said loved the idea of using Quark in the dough and will definitely make it again with the above tweaks  -  08 Feb 2011
