The plum quantity is estimated, how much can fit depends on the size of the fruit and the size of your jars. This is lovely to make when plums are in season, and then have round during Christmas. You can get creative, using the plums to serve with ice cream, or even using the liquid to make festive cocktails.

Ingredients
Serves: 20
- 2L red wine
- 400g sugar
- 2kg plums
- cinnamon sticks
- whole cloves
- sterilised screw-top jars

- Heat the red wine in a pan, but not boil it. Dissolve the sugar in it completely. Add the washed plums (with stones still inside) heat over a medium heat, never allowing it to boil.
- Add a cinnamon stick and a clove to each jar. Pour in the compote while still hot and close the jars immediately.
- Store in a cool place and leave for a few weeks to infuse.

Fabulous. It tastes great now & will be even better when matured. We used mulled wine, reduced the sugar & took the stones out. The leftover liquid we reduced & ended up with a jar of plum & wine jam. - 15 Aug 2015
