Quick Broccoli Stir-Fry

    Broccoli is quickly fried in a pan with a little soy sauce, garlic and sesame oil. Sesame oil goes a long way, so start with just a drop. I fry it so that it is still quite crunchy - a super-fast, vegetarian side dish.

    Ingredients
    Serves: 4 

    • 1 tablespoon olive oil
    • 2 cloves garlic, minced
    • 500g broccoli florets
    • 60ml water
    • 1 1/2 tablespoons soy sauce
    • 1/2 teaspoon sugar
    • a little sesame oil

    Method
    Prep:2min  ›  Cook:5min  ›  Ready in:7min 

    1. Heat olive oil in a pan and fry garlic for 1 minute, add broccoli and fry for a further 1 minute. Pour in water and cover.
    2. Cover and cook for 2-3 minutes.
    3. Uncover. Stir in soy sauce and sugar. Stir-fry for another 1 minute and when the broccoli is as cooked as you desire, add a few drops of sesame oil.
