Quick Butter Cake

    This simple but delicious cake is baked quickly and is ideal for when a surprise guest arrives. It is wonderfully moist and has a nice, nutty topping. Ready to serve in practically less than 30 minutes, you'll make this often!

    Serves: 1 

    • For the cake
    • 250ml cream
    • 250g caster sugar
    • 1 teaspoon vanilla extract
    • 4 eggs
    • 1 pinch of salt
    • grated zest of 1 lemon
    • 300g plain flour
    • 5 teaspoons baking powder
    • For the topping
    • 125g butter, at room temperature
    • 200-250g sugar (to taste)
    • 1 teaspoon vanilla extract
    • 4 tablespoons milk
    • 200g flaked almonds

    1. Preheat oven to 200 C / Gas 6 and grease a baking tin well with butter and dust with flour.
    2. Beat the cream with a mixer and beat in the sugar, vanilla, eggs, salt and lemon zest until well mixed.
    3. Mix the flour with the baking powder and fold into the mixture and stir with a spatula. Spread the cake mixture on the prepared tin and pre-bake in the preheated oven for 10 minutes.
    4. While the cake bakes, stir sugar and butter until creamy and mix in the vanilla and milk. Finally, fold in the almonds.
    5. After 10 minutes take the cake from the oven, spread the topping over it evenly (I find this is easiest done with your hands) and bake the cake for a further 10 minutes.
    6. Let it cool slightly and cut into pieces.
