Quick Courgette with Toasted Almonds

About this recipe: In the summer during courgette season, I cook them in as many different ways as possible. I love the taste of them with almonds - you can even add a bit of Parmesan or Pecorino cheese at the end.


Serves: 4 

  • 2 tablespoons olive oil
  • 2 tablespoons flaked almonds
  • 350g courgette, julienned
  • salt and freshly ground black pepper to taste

  1. Heat olive oil in a pan and add the almonds. Whilst stirring, fry for 1-2 minutes until they start to brown slightly.
  2. Add courgette and toss with the oil and almonds. Sauté courgette briefly and season to taste with salt and pepper.
