This tasty cake tastes great with tea or coffee, and benefits from a hint of chocolate. It's wonderfully light and has a fabulously unique flavor. The apricot jam and icing or ganache is completely optional; the cake tastes gorgeous either way!
Melt the butter in a large bowl and stir until light and fluffy. Gradually add the eggs, sugar and vanilla, stirring constantly.
In another bowl sieve together the flour with the baking powder. Add the cinnamon and cocoa to the flour, mix well and fold into the egg mixture. Finally, pour in the red wine..
Pour the mixture into a greased loaf tin and bake in the preheated oven for about 90 minutes. Do a skewer test - push a skewer into the centre of the cake. When it comes out clean, the cake is ready.
Remove the cake from the tin and allow to cool.
When the red wine cake has cooled, brush with apricot jam and then cover with chocolate icing or ganache. (Though the red wine cake tastes great as is!)
