I like eggs in any form - I often make these scrambled eggs because they are so beautifully coloured. Serve with fresh crusty bread and you have a great start to any day. You can add chopped fresh herbs or grated cheese for extra flavour.

Beat the eggs in a small bowl with salt, pepper and some milk with a whisk until frothy.
Melt the butter over a medium heat in a frying pan, sauté the pepper for a few minutes, stirring, until soft.
Now pour in the egg mixture and mix. Stir over a low heat until the scrambled eggs are cooked through, but still light and fluffy. Do not brown the eggs. Season with salt and pepper and serve immediately.
