    About this recipe: It doesn't get any simpler than this - other than a good cut of beef, you only need salt and garlic. I usually serve it with mashed potatoes and green veg, though it's also great with thin-cut chips and a green salad.

    Ingredients
    Serves: 6 

    • 1 (1.5kg) whole beef fillet, prepared by the butcher
    • 4 large garlic cloves (or more for garlic lovers)
    • 4 tablespoons salt

    Method

    1. Preheat oven to 230 C / Gas 8.
    2. Mash the garlic together with the salt in a small bowl with the back of a spoon until a paste forms. Rub it over the meat on all sides.
    3. Place the beef in a roasting tray and roast in preheated oven for 35-45 minutes until the meat is brown and crisp on the outside and the inside is cooked to your liking.
    4. If you are unsure, simply cut the meat and if it is still too rare, put it back in the oven for a few more minutes.
