Spaghetti with Garlic, Parsley and Chilli

    I often make this spaghetti aglio, olio e peperoncino when the cupboards are practically bare I've had no time to shop. It's simple and delicious. You can also use basil instead of parsley, if desired.

    Serves: 2 

    • 200g spaghetti
    • 3 tablespoons extra virgin olive oil
    • 1 clove garlic, finely chopped
    • 1/4 teaspoon chilli flakes
    • 1/2 bunch fresh parsley, chopped
    • salt and freshly ground black pepper to taste
    • freshly grated Parmesan cheese to serve

    1. Boil the spaghetti in plenty of salted water according to packet instructions; drain and rinse with hot water.
    2. In the meantime, heat the olive oil in a deep pan and fry the garlic in the hot oil. Add the parsley and the chilli flakes (or powder). Mix with the hot spaghetti. Season with salt and pepper and serve with freshly grated Parmesan.
