    About this recipe: A super easy and quick pasta dish with a spinach and cheese sauce that my son loves (and me, too). You're likely to have these few ingredients to hand at any time, which is perfect for a last-minute home-cooked meal.

    Serves: 2 

    • 250g pasta of choice
    • 450g frozen spinach, pureed
    • 200g mild cheese
    • salt
    • pepper (optional)

    1. Bring a pan of salted water to the boil and cook pasta according to packet instructions.
    2. Heat the spinach in a pot and just before boiling slowly stir in the cheese until it has completely dissolved. Boil the sauce briefly and season with salt and pepper.
    3. Mix the pasta with the spinach sauce mix and serve.
