Strawberry cream tart

    This is an easy to make fruit tart that works well with strawberries, or just about any other berry. Blackberries, raspberries, blueberries and preserved cherries are all quite nice!

    Serves: 10 

    • For the pastry
    • 220g plain flour
    • 100g caster sugar
    • 150g cold butter or margarine, diced
    • 2 egg yolks
    • Grated zest of 1 lemon
    • 1 pinch of salt
    • For the filling
    • 100g cream cheese
    • 250ml crème fraiche
    • 5 tablespoons sugar
    • 1/2 teaspoon vanilla extract
    • 1 pinch of salt
    • For the fruit topping
    • 500g strawberries, sliced

    1. Mix all of the pastry ingredients together, rubbing together with your fingers till you have a solid ball. Chill for 30 minutes in the refrigerator.
    2. Heat the oven to 180 C / Gas 4. Butter a round pie dish and sprinkle it with flour.
    3. Roll out pastry on a lightly floured work surface into a circle and lay it in the prepared dish. Bake for 20 minutes in the preheated oven. Remove from the oven and allow to cool.
    4. Mix all of the filling ingredients well and spread over the cooled pastry base. Finally, spread the fresh strawberries over the filling.

    A lovely dessert, but i 'm not good with pastry, i made to the recipe but the pastry kept breaking so it was a bit of a patchwork job, I made custard which I spread on the cool pastry followed by the rest of the filling and it was gorgeous.  -  12 May 2016
