This super quick and easy soup is hearty and filling, good enough for a midweek meal with some crusty bread. You're also very likely to have all or most of the ingredients to hand... even better!

2 tablespoons olive oil
3 large onions, finely chopped
250g beef mince
1 tablespoon plain flour
500ml tomato juice
salt and freshly ground black pepper to taste
paprika to taste
pinch of cayenne pepper
1 tablespoon stock granules
1 large tin sweetcorn

Heat olive oil in a pan and fry onions with the mince. Sprinkle with flour.
Pour in the tomato juice with 500ml water. Season with salt, pepper, paprika, cayenne pepper and the stock. Add the sweetcorn and let boil vigourously till the flavoured have blended and you've reached your desired consistency.
