Tomato Pasta Sauce with Basil and Mozzarella

About this recipe: This is an easy to make tomato sauce that tastes absolutely heavenly, and you'd never know it is ready in just about 30 minutes. Usually I make penne or spaghetti but other pasta works just as well.


Serves: 4 

  • 2 tablespoons olive oil
  • 1 onion, coarsely chopped
  • 2 cloves garlic, finely chopped
  • 1-2 tablespoons tomato puree (75g)
  • 2 (400g) tins whole plum tomatoes
  • 1 handful of fresh basil, cut into fine strips
  • 40g (2 tablespoons) butter
  • 50ml cream or crème fraîche
  • salt and freshly ground pepper to taste
  • 200g mozzarella cheese, diced

  1. Heat olive oil over a medium heat and sweat the onions in it for about 10 minutes. After 5 minutes add the garlic.
  2. Add the tomato puree and the tinned tomatoes, increase the heat and bring to the boil. Reduce the temperature and simmer for 10 minutes. Add the basil and stir. Stir in 2 tablespoons of butter. Leave to simmer for a while and add cream or creme fraiche.
  3. Season with salt and pepper. Finally sprinkle the mozzarella on top, allow to melt a bit and serve with the pasta of your choice.
