Wash the trout and drizzle with lemon juice. Season with salt, pepper, red pepper, lovage, garlic granules, thyme, herbs de Provence and wrap in foil.
Bake in the preheated oven for about 30-50 minutes (cook according to the size of the trout).
A relative of celery, lovage can be hard to find. Use fresh parsley, dill or basil instead.

Didn't have lovage; used trout fillet instead of whole fish. Having recently made a Thai curry, I could add a few slivers of lemongrass and a torn up kaffir lime leaf. Also added dill. Really nice, subtle flavors, which did not drown out the trout... - 24 Oct 2010
