About this recipe:
This is my version. Use a very tender cut of pork for this and thread onto skewers and barbecue. Serve with a Greek salad or wrapped in pitta with tzatziki.
1 lemon, juiced
4 tablespoons olive oil
4 tablespoons soy sauce
1 teaspoon dried oregano
3 cloves garlic, crushed
1.75kg (4 lb) pork fillet, cut into cubes
2 medium red onions, cut into large pieces
2 green peppers, cut into large pieces
- In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano and garlic; add pork, onions, and green peppers, and stir to coat. Cover, and refrigerate for 2 to 3 hours.
- Preheat barbecue for medium-high heat. Thread pork, peppers, and onions alternately onto skewers.
- Lightly oil cooking grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.

This is one of my families favouirites, we don't bother with skewers just straight on the BBQ hot plate! Delicious with chicken to.
