About this recipe:Is there anything better than freshly made potato salad? With sausages or pork, it's a dream! This is my mother's recipe, originally from Bavaria. It's a deliciously different way to prepare potatoes.
2kg waxy potatoes
1 small onion, finely chopped
250ml concentrated stock (made from half a stock cube)
5 tablespoons vinegar
2 tablespoons oil
salt and freshly ground black pepper to taste
sugar to taste
chopped fresh chives (optional)

Boil the potatoes in a large pan until soft. Drain and let cool slightly. Peel while still warm and cut into thin slices.
In a small bowl, stir the hot stock with oil, vinegar, salt and sugar.
Put the warm potato slices in a salad bowl, toss with the chopped onion and pour the hot stock over them. The potatoes should still be warm so they absorb the liquid better.
Leave to stand for 5 minutes and season with salt and pepper. If desired, sprinkle with chopped chives and serve warm.
This turned out really well and better than expected! I did not use any extra salt, oil and sugar. I fried the onions before adding to the potatoes. It was a lovely salad to have with German brats. - 23 Jul 2013
