Combine salt, paprika, chilli powder, ground black pepper and ground coriander in a bowl. Dice chicken and make sure the mixture is well rubbed into each piece. Chop the chilli and add to chicken. Leave to rest.
Dice avocado and tomatoes and finely chop the red onion. Combine in a bowl with the juice of one lemon and sundried tomatoes; season with salt and pepper.
Pan fry chicken in a frying pan over a medium heat. Once cooked through, transfer to a dish and serve in tortillas.
Wash your hands after chopping the chilli. Trust me, it burns if you get it in your eyes!
This was really nice with a great kick to it! I added some chopped cucumber and 2 cloves of garlic. Also used shredded lettuce and yoghurt. Will definately be making it again! - 10 Oct 2010
