To make the sauce, sweat off the chopped onion in a little olive oil. Add garlic, ginger, Cayenne and cumin. Add the passata and stir.
Add the lamb koftas into the sauce and the coriander and cook for 15 to 20 minutes. Season with salt and pepper and a sprinkle of chopped coriander or parsley.
