Stuffed peppers

    Quick easy and tasty. The perfect starter at a dinner party or just a quick healthy lunch.

    Serves: 5 

    • 5 large peppers, deseeded, halved
    • 2 tomatoes, chopped
    • 1 onions, chopped
    • a few drops oil
    • a few chopped basil leaves
    • 200g grated mozzarella
    • 100g English Cheddar, grated

    1. Place peppers on a foil grill pan. Sprinkle chopped tomatoes and onions over the halved peppers.
    2. Roughly apply oil to peppers and mix basil leaves with all of the grated cheeses and sprinkle over each pepper.
    3. Cook under the grill for about ten minutes or until the peppers are piping hot and the cheese has melted and is turning brown. Serve hot.
