About this recipe:
Quick easy and tasty. The perfect starter at a dinner party or just a quick healthy lunch.
5 large peppers, deseeded, halved
2 tomatoes, chopped
1 onions, chopped
a few drops oil
a few chopped basil leaves
200g grated mozzarella
100g English Cheddar, grated
- Place peppers on a foil grill pan. Sprinkle chopped tomatoes and onions over the halved peppers.
- Roughly apply oil to peppers and mix basil leaves with all of the grated cheeses and sprinkle over each pepper.
- Cook under the grill for about ten minutes or until the peppers are piping hot and the cheese has melted and is turning brown. Serve hot.
