Gluten free nutty surprise brownies

    Super easy to make and extremely chocolatey but most importantly gluten free. :) When doing gluten free baking, the ingredients work better when they are a little warmer than room temperature.

    Serves: 8 

    • 100g plain white GF flour
    • 100g butter
    • 200g caster sugar
    • 1 teaspoon baking powder
    • 1 teaspoon xantham gum
    • 2 eggs
    • 2 tablespoons cocoa powder
    • 50g white chocolate
    • 100g milk chocolate
    • 1 double chocolate bar
    • 75g mixed walnuts and cashews

    1. Preheat the oven to 180 C / Gas 4. Grease your size choice of pan.
    2. Place the flour, butter, sugar, baking powder, xantham gum, eggs and cocoa powder in a bowl and mix. When these ingredients are all mixed in, break the chocolate into squares and add them with the nuts into the mixture. Pour the mix into the pan evenly.
    3. Bake for 30-35 minutes. To check to see if they are done, stick a skewer into the middle of the pan. If it come out clean they are done; if it comes out with batter on, then leave in for a few more minutes. Leave to cool, then cut into appropriate sized pieces. :) Enjoy.
