    About this recipe: I wanted to use a nearly full tub of Greek yoghurt we had left in the fridge so used it in a sponge cake - the result was by far the best sponge cake we had ever made!

    Ingredients
    Serves: 6 

    • 300g caster sugar
    • 225g butter
    • 5 eggs
    • 250g Greek yoghurt
    • 385g self-raising flour
    • zest of 1 orange
    • icing sugar, for dusting

    Method
    Prep:25min  ›  Cook:45min  ›  Ready in:1hr10min 

    1. Preheat the oven to 150 C / Gas 2.
    2. Beat together the sugar and butter. Beat in the eggs one by one.
    3. Stir in the yoghurt and flour alternately, until smooth. Add orange zest. Pour mixture into 28cm cake tin.
    4. Bake in the preheated oven for 45 minutes. Dust with icing sugar once cool.
