About this recipe:
I wanted to use a nearly full tub of Greek yoghurt we had left in the fridge so used it in a sponge cake - the result was by far the best sponge cake we had ever made!
300g caster sugar
250g Greek yoghurt
385g self-raising flour
zest of 1 orange
icing sugar, for dusting
- Preheat the oven to 150 C / Gas 2.
- Beat together the sugar and butter. Beat in the eggs one by one.
- Stir in the yoghurt and flour alternately, until smooth. Add orange zest. Pour mixture into 28cm cake tin.
- Bake in the preheated oven for 45 minutes. Dust with icing sugar once cool.
Should it be gooey or spongy, it's been cooking for an hour and a half
