About this recipe: Grilled, lemon infused, chicken breast topped with tomato and basil, served with creamy mashed potato.
Add peas, corn and/or diced carrotts to the mashed potatoes. To do this steam the desired vegetables and stir them through the potatoes after they have been mashed.
Refrain from adding sour cream to the mash and use heart smart, salt reduced, low cholesterol margarine instead of butter.
Thick pieces of chicken can be hard to cook through evenly. Either choose thin chicken breast or flatten your chicken by hitting it with a fry-pan (be careful not to break the handle lol).
This is my favourite recipe because its quick, easy, cheap, healthy and still tastes good. Plus I love cooking/eating chicken. - 08 Aug 2010
