Chicken in a white wine basil cream sauce

    Chicken breast slowly cooked in white wine, made extra tasty with fresh cherry tomatoes, basil, chilli, garlic and a dash of cream. This warming chicken dish is perfect all year round, enjoyed with a salad for a lighter option or some wholesome brown rice mopped up with garlic bread. This is a family favourite which takes minutes to prepare and will go down a treat at dinner parties or a casual gathering of friends

    Serves: 4 

    • 4 chicken breast fillets
    • salt and pepper to taste
    • 1 generous handful fresh basil leaves
    • 200g cherry tomatoes, halved
    • 1 whole garlic bub
    • 1 fresh red chilli, or to taste
    • 1 tablespoon olive oil
    • 250ml white wine
    • 600ml fresh double cream

    1. Preheat your oven to 180 C / Gas 4. Season chicken with salt and pepper and place in a deep pan or casserole dish in one layer. Throw in the basil leaves, halved tomatoes, whole crushed garlic cloves, chopped chilli and drizzle with olive oil.
    2. Pour in the white wine so it covers most of the chicken and mix around a bit so the ingredients are evenly spread.
    3. Bake in the oven for 40 minutes, until the chicken juices are running clear and the wine has reduced by half.
    4. Take out of the oven and stir in the cream. Simmer for 5 minutes until the cream is combined. Finish with black pepper and salt to taste. Serve with rice and hot garlic bread.

    first time ive reviewed a receipe....amazingly delicious and what makes it better it was so simple to make. I had friends over for dinner and was able to quickly put this together in less than 2 minutes and let it bake in the oven while I was able to socialise...even without the convenience this dish was so delicious, I will be sharing the recipe for sure!  -  29 Nov 2012


    Planning to cook this but does anyone know if I should put casserole dish lid on or leave off? - the wine needs to reduce but I don't want to dry chicken out.  -  24 Dec 2015
