Mozzarella meatballs

    Meatballs filled with mozzarella cheese. Consider making a nice homemade tomato pasta sauce to serve with these.

    Makes: 12 meatballs

    • 2 slices seeded wholemeal bread
    • milk as needed
    • 500g lean minced beef
    • 2 teaspoons sea salt
    • 2 teaspoons ground black pepper
    • 2 teaspoons dried chilli flakes
    • 2 teaspoons dried basil
    • 3 cloves garlic, crushed
    • 2 teaspoons whole grain mustard
    • 1 egg
    • 2 packs mozzarella cheese, each into 6 pieces
    • 4 tablespoons plain flour
    • 4 tablespoons olive oil

    1. Soak the 2 slices of bread in milk, just enough to make them moist. Mix the mince with the salt, pepper, chilli, basil, garlic and mustard in a large bowl with your hands, add the soaked bread and the egg to the mix and crush into a large ball.
    2. Cut the mozzarella into 6 pieces and rub each piece with flour. Cover completely with the meat mixture, repeating this 12 times. Dust with the remaining flour.
    3. Heat the oil on a medium-high heat in a large frying pan. Once the oil is hot place the meatballs into the oil and turn when each side is browned.
    4. If using with a sauce - I recommend a homemade tomato sauce - once the meatballs are browned off, add them to your sauce for a further ten minutes before serving.

    Serving suggestion

    Serve with a homemade tomato sauce with pasta! Mmmmm . . . lovely.
