Sausage and Vegetable Soup

    A delicious soup that's quick and easy to make. Carrots, celery and smoked sausage are simmered together in a creamy soup base. Serve with fresh bread, if desired. It's perfect for the cold winter months.

    Serves: 4 

    • 475ml water
    • 2 large carrots, chopped
    • 1 stick celery, chopped
    • 1 (295g) tin condensed cream of mushroom soup
    • 1 (295g) tin condensed cream of celery soup
    • 475ml milk
    • 1/2 onion, chopped
    • 400g smoked sausage, such as Mattessons, sliced into 1cm rounds

    1. Place the carrots, celery and water into a large frying pan and set over medium heat. Bring to the boil, then cover and simmer for 10 minutes.
    2. Meanwhile, pour the milk and soups into a saucepan and set over medium heat. Simmer until the carrots and celery are tender. Stir in the onion, sliced sausage and add the carrots and celery. Cook, stirring occasionally for about 5 minutes.
