Creamy Baked Clam Soup

    This clam soup is one of the best. It's made by baking together sauteed onions with tinned soups and single cream. Serve with freshly baked bread, if desired.

    Ingredients
    Makes: 8 - 10 servings

    • 110g unsalted butter
    • 1 onion, chopped
    • 4 (400g) tins clam chowder
    • 3 (280g) tins baby clams, drained
    • 2 (295g) tins condensed cream of mushroom soup
    • 2 (295g) tins condensed cream of celery soup
    • 1 (295g) tin condensed cream of chicken soup
    • 2 litres single cream

    1. Preheat oven to 110 C / Gas 1/4.
    2. Saute the onion in the butter until translucent, about 5 minutes. Combine the sauteed onions, clam chowder, clams, soups and single cream into a roasting tin and bake for four hours.
