    This easy peasy recipe results in a sponge you will never ever forget. You can top these delicious fairy cakes with your favourite icing recipe - buttercream works a treat - and then decorate as desired.

    Makes: 12 cupcakes

    • 115g caster sugar
    • 115g self raising flour
    • 115g margarine, room temperature
    • 2 eggs, room temperature

    1. Set oven to 150 C / Gas 2.
    2. Next just put all ingredients into a bowl then mix till smooth. Place cupcake cases in a muffin tin and spoon in the cake mixture.
    3. Bake in the preheated oven until a skewer inserted in the centre of a cake comes out clean.


    Use this as your base recipe, then add flavourings to make any flavour of cupcakes you desire! For some ideas, try 1 teaspoon vanilla extract; 1 to 3 teaspoons lemon zest; 1 teaspoon almond extract; 150g chocolate chips; 1 teaspoon ground cinnamon; 1 teaspoon mixed spice; or 125g dried currants, sultanas or chopped glace cherries.

    Yum! This recipe was great but just to make it even better, I added chocolate powder ( a sprinkle) to it....came out delicious!!  -  21 Apr 2012
