Set oven to 150 C / Gas 2.
Next just put all ingredients into a bowl then mix till smooth. Place cupcake cases in a muffin tin and spoon in the cake mixture.
Bake in the preheated oven until a skewer inserted in the centre of a cake comes out clean.
Use this as your base recipe, then add flavourings to make any flavour of cupcakes you desire! For some ideas, try 1 teaspoon vanilla extract; 1 to 3 teaspoons lemon zest; 1 teaspoon almond extract; 150g chocolate chips; 1 teaspoon ground cinnamon; 1 teaspoon mixed spice; or 125g dried currants, sultanas or chopped glace cherries.
