About this recipe:
A delightful Indian take on the versatile British vegetable. Spicy little courgette patties are fried in oil, and served with chutney.
Makes: 10 bhajis
1 teaspoon salt
250g courgettes, grated
100g gram flour
1/2 teaspoon ginger paste
1/2 teaspoon garlic paste
1/4 teaspoon crushed red chillies
1/4 teaspoon parpika
1/2 teaspoon ground turmeric
1 teaspoon lemon juice
250ml vegetable oil
- Add salt to grated courgettes and mix thoroughly, retaining the water released. Leave to stand for about 5 minutes.
- Add all other ingredients except oil to form a batter.
- Heat oil in a frying pan, and add the batter carefully one tablespoon at a time. Fry over medium heat till golden brown, turning once.
- Serve with your favourite chutney.
Add a pinch of nigella and ajwain seeds for an authentic Indian flavour.
very easy and excellent taste. I hadn't got garlic or ginger paste, but I have tried substituting both real garlic and ginger and also dried ingredients and it still tasted great.
