Courgette bhajis

    A delightful Indian take on the versatile British vegetable. Spicy little courgette patties are fried in oil, and served with chutney.

    Makes: 10 bhajis

    • 1 teaspoon salt
    • 250g courgettes, grated
    • 100g gram flour
    • 1/2 teaspoon ginger paste
    • 1/2 teaspoon garlic paste
    • 1/4 teaspoon crushed red chillies
    • 1/4 teaspoon parpika
    • 1/2 teaspoon ground turmeric
    • 1 teaspoon lemon juice
    • 250ml vegetable oil

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Add salt to grated courgettes and mix thoroughly, retaining the water released. Leave to stand for about 5 minutes.
    2. Add all other ingredients except oil to form a batter.
    3. Heat oil in a frying pan, and add the batter carefully one tablespoon at a time. Fry over medium heat till golden brown, turning once.
    4. Serve with your favourite chutney.

    Other ideas

    Add a pinch of nigella and ajwain seeds for an authentic Indian flavour.

    very easy and excellent taste. I hadn't got garlic or ginger paste, but I have tried substituting both real garlic and ginger and also dried ingredients and it still tasted great.  -  15 Oct 2013
