    About this recipe: A fantastic tasting salsa recipe given to me by a close friend. The flavour of grilled tomatoes and spices tastes great with tortilla crisps.

    Serves: 16 

    • 4 large ripe tomatoes, halved and seeded
    • 1/2 red onion, finely chopped
    • 2 cloves garlic, peeled and crushed
    • 2 red chillies, seeded and finely chopped
    • handful chopped fresh coriander
    • 1 tablespoon olive oil
    • 1 tablespoon lemon juice
    • salt and freshly ground black pepper to taste

    1. Preheat the grill.
    2. Arrange tomatoes on a medium baking tray. Checking frequently and turning occasionally, grill tomatoes until darkened, about 5 minutes. Remove from heat and place in a small, sealed container to cool, about 15 to 20 minutes.
    3. Remove and discard tomato skins. Chop tomatoes and place in a medium bowl. Mix in red onion, garlic, red chillies, coriander, olive oil, lemon juice, salt and pepper. Cover and allow to stand about 1 hour before serving.

    Used this salsa on nachos...much better than from the jar! I let it stand o'night in the fridge for the flavours to mix. - 01 Oct 2012
