Grilled tomato salsa
A fantastic tasting salsa recipe given to me by a close friend. The flavour of grilled tomatoes and spices tastes great with tortilla crisps.
Ingredients
Serves: 16
- 4 large ripe tomatoes, halved and seeded
- 1/2 red onion, finely chopped
- 2 cloves garlic, peeled and crushed
- 2 red chillies, seeded and finely chopped
- handful chopped fresh coriander
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- salt and freshly ground black pepper to taste

- Preheat the grill.
- Arrange tomatoes on a medium baking tray. Checking frequently and turning occasionally, grill tomatoes until darkened, about 5 minutes. Remove from heat and place in a small, sealed container to cool, about 15 to 20 minutes.
- Remove and discard tomato skins. Chop tomatoes and place in a medium bowl. Mix in red onion, garlic, red chillies, coriander, olive oil, lemon juice, salt and pepper. Cover and allow to stand about 1 hour before serving.

I am always looking for a good salsa recipe. The tomatoes definitly have to be cooked longer than 5 minutes, and the flavor was really .."blah". Usually a cooked salsa will be mashed or blended.
