Avocado and Stilton Soup

    If you love avocados, you will love this avocado soup. It's a creamy soup made from fresh avocadoes and tasty blue Stilton cheese. Just five ingredients combine to make a soup that is very richly flavoured.

    Serves: 4 

    • 1 onion, finely chopped
    • olive oil for frying
    • 1 clove garlic, finely chopped
    • 4 ripe avocados, peeled and cubed
    • 170g (6 oz) blue Stilton cheese
    • 600ml (1 pint) single cream
    • salt and pepper to taste
    • chopped fresh parsley to serve

    1. Sweat onion in a pan with a little olive oil. Add the crushed garlic.
    2. Add the cream, Stilton and two-thirds of the avocados to the onions and simmer for 5 minutes. Transfer to a blender and process until smooth. Return to the pan and add seasoning. If the soup lacks colour a little saffron or tumeric may be added.
    3. Finally add the remaining avocado and cook briefly before garnishing with chopped parsley and serving.
