If you love avocados, you will love this avocado soup. It's a creamy soup made from fresh avocadoes and tasty blue Stilton cheese. Just five ingredients combine to make a soup that is very richly flavoured.
Sweat onion in a pan with a little olive oil. Add the crushed garlic.
Add the cream, Stilton and two-thirds of the avocados to the onions and simmer for 5 minutes. Transfer to a blender and process until smooth. Return to the pan and add seasoning. If the soup lacks colour a little saffron or tumeric may be added.
Finally add the remaining avocado and cook briefly before garnishing with chopped parsley and serving.
