Chan's Chinese Chicken

    A sweet and spicy Chinese chicken dish. This is made with chicken thighs, browned with onion, garlic and mushrooms, then seasoned with chillies and shop-bought hoisin sauce. Serve with rice.

    Serves: 6 

    • 10 skinless, boneless chicken thighs
    • 4 tablespoons vegetable oil
    • 2 onions, chopped
    • 4 garlic cloves, finely chopped
    • 500g button mushrooms, quartered
    • 482g jar Hoisin sauce
    • 3/4 green chillies, finely chopped
    • 2 (15g) bunches fresh coriander, chopped (including stalks)
    • salt to season

    1. Cut chicken thighs into bite size pieces, set aside
    2. In a large saucepan, brown onion and garlic in the oil, then add chicken pieces and cook for 5 minutes.
    3. Add mushrooms and the whole jar of Hoi sin sauce plus half the jar filled with water. Stir in chillies and add 1 bunch of the chopped coriander including stalks, season to taste. Simmer until chicken is tender. Add a little more water if needed, before serving add other bunch of coriander.
